Kindergarten pudding

2 Bananas

4 Tbsp Peanut Butter

1 Cup Applesauce

1/2 cup honey

Combine ingredients in a bowl and mix well.

Serve immediately or refrigerate to serve cold.

 

 

Johnny Mazetti

2 lbs. ground beef
2 1/2 c. finely chopped celery with leaves (about 1/2 bunch)
2 c. chopped onions
2 cloves garlic, finely chopped
1 Tbsn. water
1 (8 oz.) pkg medium-fine noodles
2 cans condensed tomato soup
1 (6 oz.) can mushrooms and liquid (Omitted in Kels)
2 tsp. salt
1/2 tsp pepper
1/2 lb grated sharp Cheddar cheese (2 c.)

-Brown meat in skillet. Add celery, onions, garlic and water. Cover and steam until vegetables are tender. Remove from heat.
-Cook noodles according to package directions; drain. Add noodles to meat mixture; mix in soup, undrained mushrooms, salt and pepper.
-Spread mixture in a 3 qt. casserole dish. Sprinkle cheese on top. (Dish may be refrigerated up to 24 hours, or frozen before cooking.)
-Place in cold oven; set at 250F. Bake uncovered until bubbly, about 1 hour.
-Makes 6-8 servings.

BAKED STUFFED CHICKEN

6-7 lb. Chicken

1 cup melted butter

1 cup stuffing (Pepperidge Farm is good.)

1 cup uncooked popcorn (ORVILLE REDENBACHER'S LOW FAT)

Salt/pepper to taste

Preheat oven to 350 degrees. Brush chicken well with melted butter, salt,
and pepper. Fill cavity with stuffing and popcorn. Place in baking pan
with the neck end toward the back of the oven. Listen for the popping
sounds. When the chicken's ass blows the oven door open and the chicken
flies across the room, it's done.

Shepherd's Loaf

Brown 2 lbs ground beef. Prepare 4-6 cups mashed potatoes. combine burger, potatoes and 1 can kernal corn. Add 1/2 cup ketchup. Mix thoroughly. Press mixture into loaf pan. lightly top with grated cheddar. Bake at 325F for 25 minutes. Serve with extra ketchup.

Rice Flour Griddle Cakes
Mix, then sift:
  2 c. rice flour
  4-1/2 tsp. dbl-acting baking powder
  2 tsp. maple sugar
  2 tsp. salt
Beat the mixture while adding:
  2 c. milk
Add & barely blend:
  1 beaten egg
  1 Tbsp. melted butter

 Cook on hot griddle as normal for pancakes

 

Boeuf-pain d’Hiver(Winter Meatloaf)

In a large bowl, combine chopped onions(1medium), ground black pepper(1 ½Tbsn), garlic powder(2Tbsn), cumin(tsp), 1 egg, 2lbs ground beef, four hard shakes of Frank’s Red Hot.. Mix by hand. Add 2 cups Italian bread crumbs and kneed in.  1 Tblspn Worcestershire sauce.  Kneed in. ½ jar garlic salsa..work together.

Refrigerate 1 hour. Bake 70 minutes at 375F.

 

Garlic Pesto Pasta

1 Cup Extra Virgin olive oil

1 Cup pine nuts

1 Cup grated parmesean cheese

1/4 Cup grated romano cheese

1/3 Cup dried basil OR 1 Cup fresh basil

5-10 cloves garlic (depending on your spouse)

1 Cup pasta cooking water or warm water

 ===================

In a blender combine olive oil, garlic and basil.  Blend well.

While blending, gradually add parmesean and romano.

Add pine nuts and blend lightly.

When pasta is almost done cooking, take out 1 Cup of its water, allow to cool until it’s just warm (or cheese will melt) and add to blender and blend well. (if not making pasta, substitute 1 cup warmed water.)

 Cook pasta with 1 Tablespoon olive oil, rinse well. Works best over well cooked pasta.. Al dente sucks. 

Really hot pasta will melt cheese and ruin pesto.

For a twist in taste, use 1 Tblspn tarragon in cup before measuring in the 1/3 cup basil. (total dried spice should still be 1/3 cup)

 

Mexican Chicken Bake

 

1 whole chicken breast, 1 medium onion, 1 pkg taco seasoning mix, minced garlic, hot sauce, salt, pepper, olive oil, diced green chilis, jalapenos, chopped mushrooms.

Sautee 1 sm-med size sweet onion w/salt & pepper in olive oil

 Dredge cut up Chicken in ¾ or ½ a package of taco seasoning mix

 Add to the sautéed onions.  Add tablespoon minced garlic.  Add hot sauce.

 Put in some cayenne pepper.  Add Diced Green Chili’s and mushrooms.  Add salsa let simmer for a bit.  Add more hot sauce if wanted.   Add jalapenos and mix with cooked Spanish rice. 

 Top w/cheese and bake for 15 minutes.

 

Ranch Chicken

Garlic & Herb Bread Crumbs, Parmesan Cheese, Ranch Dressing,Pepper 

Combine Breadcrumbs & Parmesan cheese. Coat chicken breast w/ranch dressing.   Coat chicken w/crumb & cheese mix.  Top with extra cheese.  Bake @ 350 degrees for 35 minutes broil for 5 minutes.

 

Super garlic chicken and pasta

 Bake chicken breasts on George Foreman grill, or in oven.

 Boil angel hair pasta 

Sauté  butter, olive oil, and 4 cloves sliced garlic in a large pan add a Dash of salt 

Make fresh or buy commercial pesto sauce

Mix completed chicken into sauté pan…

Mix completed pasta into sauté pan

 Shred parmesean, motzarella and/or cheddar cheeses over while hot.

 Eat.

 

Artichoke Chicken Goodness

Boneless cut up chicken, 2 cans artichoke hearts, 2 big scoops minced garlic, juice of half lemon, lots o pepper, little bit of chicken broth, dash of cooking wine, Parmesan cheese, Mozzarella cheese

 cook chicken in olive oil, peppered

when almost done add drained, cut up artichokes

squeeze in lemon juice

add garlic

more pepper

cook, let simmer for a bit

add some parm

the chicken broth and wine

simmer for a bit more

top with parm and motz

Eat.
